Willie, you are right (to an extent), but trying to determine how much mileage a fighter has is as hard as deciphering the Rubik's Cube after about five shots of tequila. Some young guys have a ton of mileage due to gym wars and some older fighters have less (taken less shots) even if they have had more professional fights. In terms of heart; I agree with you. However, that is an intangible that often changes depending on the situation. For example, is Miguel Cotto a fighter who resorts to low blows when he's in trouble (see Judah fight) or is he a resilient one who can fight through anything (see Torres fight)? The ability to take a punch is indeed key BUT I think the ability to avoid punches is of more consequence. Even he so-called best chins can get dented if the defense is porous or the opponent is much faster and stronger. You make some good points though.

There is a little more than this to picking winners. You're leaving out quite a few factors: how much wear and tear the fighter has on his body, does he cut easily, is he out of shape between fights, does he use his head in the ring, does he have heart or will he quit, can he take a punch, and is he technically sound.

Tom, I think I'd lean toward Joel Julio, even though I think he is a bit overrated (see video of his bout with Carlos Quintana if you need any evidence).
